This 2.5-hour adventure into the turbulent world of rum offers you a deep insight into the sights, sounds and flavours of the almost 500-year-old spirit.

Join us as we explore its history and how it influenced the American War of Independence, how the Irish potato blight led to its demise and what the Battle of Trafalgar has to do with its name.

What exactly is rb 12-599 and what would happen if I had it in my pocket on an aeroplane? How Rum had nothing to do with the first moon landing and what would have happened if he had.

Learn about the entire production process from pressing sugar cane to barrel ageing and how to distinguish between the French, Spanish and English methods, and sample some premium and rare rums that are not commercially available. … at least not yet.

And last but not least, have fun, because that’s what rum is for.

Whiskey drinkers will find aged rum surprisingly familiar. Like whiskey, rum can be complex, with notes of oak, spice, and vanilla—especially when aged in bourbon or sherry casks. Sipit neat, nose the glass, and explore its layers. A quality rum tasting offers whiskey fans a new but comfortable adventure in flavor.

The Ploughman’s Lunch, a rustic Irish meal traditionally composed of bread, cheese, pickles, and cold meats, has deep roots in agrarian history. Once a practical midday meal for farmers, it symbolized simplicity, sustenance, and local produce. Over time, it evolved into a cultural staple, often served in Irish pubs as a nod to rural heritage.

Pairing this old Irish traditional meal with Caribbean rum may seem unconventional, but the contrast is strikingly complementary. The sharp tang of mature Irish cheddar and pickled onions cuts through the rich, molasses-sweet depth of aged rum. Together, they offer a surprising blend of old-world tradition and tropical flair — a flavorful celebration of global connections through food and drink.

Old sailing ships, which also play an important role in our presentation, were the backbone of the rum trade during the 17th to 19th centuries, shaping global commerce and colonial economies. These wooden vessels—brigs, schooners, and frigates—were essential for transporting sugar, molasses, and the resulting rum from Caribbean plantations to Europe, North America, and Africa.

 

Today, preserved and replica ships remind us of rum’s storied past—one intertwined with maritime adventure, economic expansion, and darker chapters of human history.

In our cellar we combine a remarkable blend of tradition and innovation, an old machine that mimics the motion of ocean waves plays a key role in shaping the flavor of premium rum.

95-litre barrels are placed on this rhythmic device, which gently rocks them as if they were aging at sea.

This constant movement encourages deeper interaction between the rum and the wood, accelerating the aging process and drawing out rich, complex notes of oak, spice, and caramel. The result is a smoother, more layered spirit—proof that even the motion of the sea can leave a lasting imprint on rum.
